JUSTAKE develops ‘The Mushroom Steak,’ a plant-based meat alternative built around lion’s mane mushrooms. The company positions its product as clean-label and minimally processed, engineered to mimic muscle-like texture through ‘patent-pending enzyme technology’ that transforms a superfood mushroom into a flavorful, juicy, and rich-tasting steak. According to the company’s site, the product is cholesterol-free and aims to deliver protein, iron, and vitamin B12, while avoiding cholesterol and supporting dietary needs for both meat lovers and vegans.
Headquartered in Freising (Bavaria, Germany) and presented as a Munich startup, JUSTAKE says its vision is to pioneer a market for minimally processed, natural, and sustainable meat alternatives. The mushroom steak has been described as convincing judges of TUM’s Technical University of Munich innovation initiatives, including the AgriFood Start-up Booster Grant and ‘IGL #9’ food and drink innovation competition. The founding team includes a food technologist (Sarah Schlingloff) and a co-founder with a management background (Timo). The company also supports early access via a waitlist for product launch.
